    The first rumored occurrence of chocolate addiction is said to have been during the ancient Mayan civilization sometime around 400AD. The Mayans were the first to process the confection and called it 'xocoatl', from which the English term 'chocolate' is derived. Originally chocolate was consumed in beverage form, not solid form. The invention of chocolate mousse is generally credited to Henri de Toulouse-Lautrec, who was a famous French painter, noted lover of chocolate and fresh cream. Henri decided one day he was going to combine his favourite foods together with a bit of sugar and voilà! Chocolate mousse was born! However, it was Toulouse-Lautrec's friend, Aristide Bruant - also a chocolate lover, who gave him the idea to make a white chocolate version of his dessert invention. Toulouse agreed and thus a second mousse was made, White chocolate mousse! Sweet, creamy, velvety, and of course chocolatey are words used to describe not only Toulouse-Lautrec's culinary inventions, but also our White Chocolate Mousse flavoured black tea!   • Robert Fortune Broke the Commodity Monopoly on Tea

    Robert Fortune, he was a tea thief, scientist, botanist and a cunning man in the art of Corporate Espionage that broke the commodity monopoly on tea. Daring and adventuresome, he was the son of a Scottish farm worker with no higher education but an acquired wealth of practical knowledge. He was hired by the British Horticulturist Society, in the mid 1800's to penetrate the wilds of deep China in search of Tea Seeds, Tea Plants. His mission also required him to learn about the closely guarded secret of cultivation, growing and manufacturing of tea. Whilst on his Sojourn to learn these secrets, he wore Mandarin attire and even a "Queue" (fake braided ponytail). Ultimate goal of the British Horticulturist Society.......Bring Tea seeds & Tea Plants from China to be grown in India. His quest took him to places a Westerner had never gone before. He was welcomed and trusted by an overseer of a tea facility and learned much about Chinese Tea, including plucking, drying, rolling & fermentation processes. Disguised as a wealthy Chinese Industrialist, he was able to able to garner the trust necessary to be able to acquire the much desired tea seeds and tea plants. All the tea in China could now be grown in India too, thus, Robert Fortune broke the commodity monopoly on tea.   • Best Practices for Perfect Iced Tea

    Showing: Butterfly Blue Pea Flower Herbal with Lemon, Honey & Ice 1. Use double the recommended amount of loose tea. eg: 1 tablespoon per 12 ounces. 2 Boiled water infusion of loose leaf tea draws out the best flavour. 3 Use recommended infusion times for different kinds of Iced Teas. Black Loose Tea - 5 minutes - over this time will make it bitter due to tannins Green Loose Tea - 4 minutes - over this time will make it bitter due to tannins Fruit & Herb teas - at least 15 minutes, but best left to infuse overnight is the best. 4 This process can be done in any glass heat resistant container or large tea pot. 5 If you do not have a 3" large infuser (available on our site), leave tea loose and stain off. 6 If adding sweetener, do so when infusing the loose tea with boiling water. 7 Once you have your base product, add what you like, fruit, lemons, mint etc. 8 Add Ice!

  • Copy of "Agony of the Leaf"

    This all sounds so Shakespearean! Well, 'tis to a tea leaf. The term "Agony of the Leaf" refers to the unfurling of the tea leaf during infusion. This can be very dramatic to see and a wonderful stage of tea brewing. This is best done by putting loose tea leaves in a clear glass pot and letting them infuse without the use of an infuser. If you do not have a clear pot then just enjoy in your own special tea pot, and when you you have enjoyed your tea, simply dump out the tea leaves onto a plate. It is fun and interesting to see and touch the whole tea leaves. Because the leaves are not constrained in any fashion, they are able to fully share their beautiful shape and full flavor. Above we have used an Oolong tea to demonstrate the difference between steeped and un-steeped tea leaves; Oolong Teas are excellent to witness the unfurling process. Yet another excellent reason to drink loose leaf tea, even if purely for the fun of watching the tea leaves unfurl. If you are immersing yourself in the exciting world of higher quality ethically sourced teas, or just starting out on this wonderful road to good tasting fresh tea; there is no doubt you will enjoy and appreciate just what a tea leaf goes through.   • Cookie Secrets

    We've got a few cookie secrets to share with you! These tips will make the best chewy/crispy cookies you have ever made. I have been baking cookies for a long time now (not saying how long) just know it's been a while! We at TeaZehri bake our in house cookies always following these basic rules. 1. Most good drop cookie recipes will have 1C. butter, 2C. sugar and 2 eggs & vanilla., plus the rest of the ingredients. 2. This is most important!!! Cream soft butter 2 minutes, add sugar slowly, beat this mixture another 2 minutes, then add both eggs & vanilla. Beat an additional 2 minutes. This can be done with a hand mixer or stand-up mixer. (A total) of 6 minutes) We call this the "Two Minute Rule". 3. Exact measuring in baking is very important. 4. Do not cheat on the ingredients. If you don't have enough of an item or plan on substituting: Don't! It doesn't work. 5. Don't over bake. If the centers seem a little squishy still, that's fine as they will finish baking out of of the oven on the hot cookie sheet. 6. Use parchment paper 7. Cool one to two minutes on hot cookie sheet then transfer to a cooling rack. Hope you enjoy your next batch of cookies!   • Iced Tea Made Perfect

    One of the most often questions we get asked in the spring and summer season: How do we make our delicious iced teas? We serve a variety of our blended teas over ice in store during these seasons. A. Good quality tea makes a good iced tea. Flavorful without using a ton of sugar B. Many tea blends make wonderful iced tea. "experiment"We use Flavored Black Teas, Flavored Green Teas, Flavored Rooibos Teas, Tisane Tea (fruit and herb), and even Herbal Tea (like hibiscus) C. Remember your tea will get watered down when you and ice, so general rule of thumb use double what you would for hot tea. (1tsp. per cup 1T. per 2-3 cup teapot. D. Most Important the right recipe. TEAZEHRI ICED TEA RECIPE makes 1-1/2 liters of tea INGREDIENTS: 25 gr. or 1 - oz of tea 1-1/2T of sugar or honey. half that if using Stevia boiling water INSTRUCTIONS: Place sugar, honey or Stevia & 25gr of tea (in a LARGE infuser into a 6 cup tea pot or heat resistant container. Add boiling water. allow to steep for recommended time. Remove infuser with tea and let cool. Put into a container of your choosing and refridgerate. STEEP TIMES: Black Tea 5 minutes, Green Tea 3-5 minutes Tisane (fruit & herb) can be left overnight in the teapot overnight, then removed NOTE: Hibiscus is the "ONLY" tea that brews overnight on the counter of fridge without using boiling water. Part of the "Agony of the Leave" or unfurling the tea leaf for maximum flavor, requires the use of boiling water. ENJOY!!!!

  • The Emerald Isle

    When not partaking in a Guinness, the Irishman consumes, on average, 6 cups of tea per day! Even with a relatively small population of 3.9 million citizens, Ireland still consumes 24 million cups of tea per day! Tea and Ireland go way back actually. The beverage was first introduced to Ireland in 1835 by British traders when Ireland was still part of the British Empire. Ireland could always count on a steady supply of tea as they relied on British importers for their fix of tea, that is until WWII when Britain was forced to ration foodstuffs of all kinds, tea included, throughout the entire empire. Much to the dismay of the British government, during the war, Ireland declared itself neutral in the global conflict. This was viewed by the British as an act of subversion and thus they cut Ireland's tea ration to nearly nothing. Ireland was not fazed by this action however as the Irish government decided to set up their own tea importing company: Tea Importers (Eire) Ltd. Tea drinkers all across Ireland rejoiced and continued on drinking one of their favourite beverages. In tribute to Ireland and it's hardy spirit, we have our Creamy Irish Breakfast tea, which is a lovely bold blend of East African, Ceylon and strong Assam black tea varieties.     What tea comes with a bang you ask? Why it's Gunpowder green tea! But don't worry it won't explode or make loud noises and it doesn't contain any gunpowder. According to legend the tea got it's name from a young English clerk, who thought the tiny rolled balls of tea leaves looked like gunpowder! The tea leaves are specially selected for quality size and style, they are then rolled into small balls. This method of processing the tea means that Gunpowder tea will actually keep longer than other green teas and has become popular because of this characteristic! Gunpowder green tea comes from Taiwan and the Zhejiang province of China; however, some believe that higher quality gunpowder green teas come from Taiwan as Taiwan's gunpowder quality improved significantly after 1949. The first tea bushes planted in Taiwan were planted around 300 years ago with bushes from the Fujian province of China. The bushes in Taiwan flush around five times per year between April and December. The best leaves are picked from the end of May to around mid-August. Interestingly, before the 1900's gunpowder green tea comprised around 60% of America's total tea imports, today that figure is less than 1%. This tea is a wonderful experience for the senses and not just smell and taste. Try brewing the tea loose, with boiling water, in a cup, bowl or teapot that you can see into and watch as the leaves open up and almost "bloom" like a flower would and float gracefully to the bottom.
